Think left overs for breakfast

Do you ever wonder what you’re going to eat for breakfast. Do you have left overs in your fridge? Put them to good use. They can be your next mornings breakfast.

I made a side dish of potatoes, sweet potatoes, asparagus, and Brussel sprouts this week for dinner and actually had some left overs. I don’t like to waste any food, so it became breakfast. I needed a little protein to go with it, so I scrambled an egg real quick and mixed it all together. It tasted so yummy! It’s a great way to start the day.

You can take other leftover vegetable dishes and add protein to them for the morning and you have a quick breakfast.

Quinoa is protein packed and a great way to start your day. Make it at the beginning of the week and use it as a cereal with nuts, coconut, berries, banana,and nut milk. You can also make power bowls with beans, eggs, and veggies. Start your day strong.

Are you running out the door. Put it in a cup and eat it on the run. Don’t let busyness be an excuse to not have a healthy breakfast to get your day off to a great start.
